Months ago, Paul shared one of our favorite Edward Abbey quotes — a musing on wilderness from Desert Solitaire:

We need wilderness whether or not we ever set foot in it. We need a refuge even though we may never need to go there. I may never in my life go to Alaska, for example, but I am grateful that it is there. We need the possibility of escape as surely as we need hope…

We need a refuge, even though we may never need to go there…

Enter Hazelnut Kitchen.

Hazelnut Kitchen is our little refuge in Trumansburg, NY. Billing itself as a “farm to table destination restaurant,” Hazelnut Kitchen is producing the kind of fresh, local, and sustainable food that is happily becoming ubiquitous everywhere. Even though we can’t afford to eat there often, it makes us happy just to know it’s there. People come to Trumansburg from all over to visit Hazelnut Kitchen (like barVino in North Creek) and it makes the whole town the better for it.

I’m looking forward to having some visitors to take to our new refuge.

Sigh…Update. I’m going to need to temper this post, like tempering a batch of eggs before incorporating them into a hot substance. We returned to Hazelnut Kitchen (with my parents, no less) and our sour, sad, angry waitress made me curse my earlier exuberance about this place. The food though…the food was still great. It’s just amazing how big a difference a server can make.
